Coronation Chicken Wraps

- 1 onion
- Olive oil for frying
- 1 tbsp curry powder
- 1/2 tbsp tomato puree
- 1 bay leaf
- Lemon juice
- 150 ml water
- 2 chicken breasts
- 50 g mayonnaise
- 75 g creme fraiche
- 2 tbsp In A Pickle Authentic Mango Chutney
- Salt and black pepper
- Fresh parsley
- Rocket
- Soft flour tortillas
1. Finely dice the onion and fry in olive oil until softened, then stir through the curry powder, tomato puree, a dash of lemon juice and water. Add the bay leaf and simmer until reduced by half.2. Discard the bay leaf and transfer the curry mixture to a bowl to cool. Cut the chicken into bite-sized pieces and fry gently so it cooks through but doesn?t turn crispy.3. Mix the mayonnaise and cr?me fraiche, then stir through the curry mixture, cooked chicken and In A Pickle Authentic Mango Chutney. Add a sprinkling of chopped fresh parsley, a splash of lemon juice, and season with salt and black pepper.4. To serve, pop into soft flour tortillas with plenty of fresh rocket.
